One Pot Lasagna Soup

  • 1 Tbsp olive oil
  • 3 cloves garlic
  • 1/2 cup diced onion
  • 1 lb Italian Sausage
  • 1 zucchini, halved and sliced 
  • 1 teaspoon chili powder 
  • 1 Tbsp Italian seasoning
  • 1 teaspoon garlic salt
  • 1 cup tomato sauce
  • 28 oz diced tomatoes
  • 32 oz vegetable broth 
  • 6 oz penne rigate

Heat olive oil in a large pot over medium-high heat. Add onions and saute for 2-3 minutes until they start to soften. Add garlic to the pot and saute until aromatic. Add zucchini and Italian sausage to the pot. Stir to combine and cook until meat is browned. Add Italian season, garlic salt, chili powder, diced tomatoes, tomato sauce, broth and pasta. Stir to combine. Bring to a boil and then reduce to a simmer until the pasta is cooked to the through (approximately 16-18 mins). Season with salt and pepper to taste. Serve with fresh parmesan and crusty bread.
