When home becomes the headquarters for so many activities, it’s important to find ways to keep mealtime a simple, healthy, and delicious event. One that makes the most of the things already in your kitchen and that doesn’t use up every dish in the house. (Also, some of the heavier pans may be currently enlisted as anchors in the Kingdom of Blanket Forts, so simplicity is truly a necessity.)
We love easy meals that nourish and embrace the safety and love of home, which means we’re excited to share one of our favorite one-pot recipes with you. This One Pot Lasagna Soup is the perfect pantry-friendly recipe, and it’s popular with everyone from grandpas to the littlest of picky-eaters. We hope it helps make dinner a time of gathering and sharing, all while keeping your kitchen/home office/art studio a little tidier.
This recipe is easy to double, so consider making a second batch to drop off to an elderly neighbor or grandparent who is staying safe at home and might not be able to grocery shop as often.
And for the friends and loved ones who live too far away for your own homemade soup, send the next-best thing. Spoonful of Comfort is sharing care around the country with care packages of soup, rolls, cookies, and nostalgic items that feel like the love and comfort of home.
Now is the perfect time to share a little of the love from your at-home Kingdom, and it’s a great way to help keep our communities happy and healthy. Recipe below!
One Pot Lasagna Soup
- 1 Tbsp olive oil
- 3 cloves garlic
- 1/2 cup diced onion
- 1 lb Italian Sausage
- 1 zucchini, halved and sliced
- 1 teaspoon chili powder
- 1 Tbsp Italian seasoning
- 1 teaspoon garlic salt
- 1 cup tomato sauce
- 28 oz diced tomatoes
- 32 oz vegetable broth
- 6 oz penne rigate
Heat olive oil in a large pot over medium-high heat. Add onions and saute for 2-3 minutes until they start to soften. Add garlic to the pot and saute until aromatic. Add zucchini and Italian sausage to the pot. Stir to combine and cook until meat is browned. Add Italian season, garlic salt, chili powder, diced tomatoes, tomato sauce, broth and pasta. Stir to combine. Bring to a boil and then reduce to a simmer until the pasta is cooked to the through (approximately 16-18 mins). Season with salt and pepper to taste. Serve with fresh parmesan and crusty bread.
